Jennifer Aniston Bulgur Salad

Urban legend has it that Jennifer Aniston brought in this salad for lunch every day for 9 years on the set of Friends. While that probably isn't entirely true, once you taste how delicious this dish is, you might believe it! The recipe calls for vegan feta cheese crumbles. We strongly prefer the taste and texture of the Follow Your Heart brand if you can find it. Also, this recipes makes a very large volume (almost two very large mixing bowls full) so that you can enjoy it all week as leftovers for lunch. Enjoy!

Prep time: 30 min (plus another 30 minutes for the bulgur to cool)

Serves: 12


Ingredients

  • 24oz. bag of bulgur, uncooked

  • 8 cups vegetable stock

  • 1 small red onion, finely diced

  • 1 bunch flat leaf (a.k.a. Italian) parsley, finely chopped

  • 1 bunch fresh mint leaves, finely chopped

  • 1 bunch fresh dill, finely chopped

  • 12 oz shelled pistachios

  • 2 English cucumbers, peeled and diced

  • 4 - 15oz. can chick peas, drained and rinsed

  • 2 - 6oz. containers vegan feta crumbles

  • 3 - large lemons, juiced

  • 2 tsp. kosher salt

  • 1/2 tsp. ground black pepper


Directions

  1. Cook the bulgur with the vegetable stock either in your rice cooker or dutch oven. If cooking on the stove, bring stock and bulgur to a boil, then lower heat to simmer and cover for 15 minutes until liquid is absorbed. Allow bulgur to cool before mixing with other ingredients. (We sometimes stick it in the freezer if we're in a hurry to eat.)

  2. In one or two very large mixing bowls, add and mix all of the remaining ingredients.

  3. When the bulgur has cooled, combine it with the other ingredients. Enjoy!
